I may want to add a page with only information, for example things to do in my area, can I create a page with only info?
No worries at all, you just need to create another category page which you can find how to do here: http://help.mysites.travel/home/pages-menus/

How do I create the menu pages and sub categories? 
You can go to this http://help.mysites.travel/home/pages-menus/ which will explain how to: 

  • • create a new page.
  • • write content for that page.
  • • describe that content for site navigation and search optimization.
  • • create hyperlinks.
  • • save your page as a draft.
  • • publish your page to the live site. 

I would prefer to add all the products which has live availability, but I understand some operators don't seem to have that feature yet. If someone books a product which is not on live availability yet, what happenes then? 
The booking process for the customer will explain that its only a requested date. The customer selects a "Preferred Date" instead of live date. You will get an email notification as soon as someone goes to the booking stage and purchase something. Once the customer makes a booking they will receive an automated email confirming their transaction. You can write what ever message you like for that notification. (You can change this in SHOP > SETTINGS > EMAIL SETTINGS)
